I went 90%+ vegetartian/vegan less than a year ago. I probably eat meat 1/2 times a week, eggs maybe once, and almost no dairy. I was a big meat eater before so I needed some help with healthy recipes etc. I bought the Eat to Live cookbook and also just scour the internet for good vegan recipes and have built up a pretty to cache of recipes to use. I think the complex carbs contained in vegetables/beans/etc are very different than what you are getting from white bread etc.

Also please note I don't calorie count with this diet. It works great for others but I don't want to be bothered and with this diet I stuff my face and eat around 1,500 calories a day.

I really like the Eat to Live cookbook and recipes. There's also a bunch of similar recipes at the end of the book The End of Diabetes by the same author.
