They don’t directly protect much (that’s what your gloves are for!) but they do reduce long term wear and tear.
In wrapping your hands up fairly tightly you make your closed striking fists more of a uniform solid object so your joints don’t take as much stress.
FWIW I don’t train frequently at the moment and don’t use them, it’s much more comfortable without them for me.
If you were training on the daily I’d use them though or at least these or similar, not as good though cos you want handwraps snug.
