I tend to use two different methods: deterrents, and providing an acceptable alternative.

Despite having hanging lights and unused ceiling fans, my birds prefer to use the rope swings I have hanging from the ceiling. Not only are they higher up, but they're far more comfortable for them to sit on. I have one of these and one of these.

As for deterrents, I bought a crow skeleton halloween decoration that does wonders for keeping the birds from flying on top of the fridge. I've also heard of people using zip ties to discourage perching, similar to the bird spikes used to deter pigeons.
