This is the offical one from Nintendo. And this is Mayflash's version of the same product. Both should perform as good as the other in Dolphin.
Mayflash's version has a PC mode though, where you can use you GC controller as a generic input device. Plus it's jus a third of the price. Then again Nintendo products are known for their resilience.
IMO Mayflash's has a better price-performance ratio. I would buy that one.
You should buy either the 4 port mayflash or the official wii u gamecube to usb adapter. Both of these make dolphin feel just like the gamecube in terms of controller inputs.

Or one of these new controllers that are exactly the same as the GameCube Controllers but have a USB connector instead of the GameCube connector, so you can plug it in directly to your Wii U

Yeah sure man, either get the Mayflash adapter (which I'd recommend because it has "native" mode, and PC mode, so you can freely use it with other games besides dolphin):
