If you folks haven't already done this, I highly recommend that you get one or two folks ServeSafe Certified under the Food Protection Manager program. It's short money, only takes a day online to take the course and then you take the test at a proctor's house.

Always use that "ServeSafe Food Protection Manager" title in your signature block when communicating with the BOH and the FDA. It shows them that you're knowledgeable about food safety.

As for the surface sanitizer, use quats like Nu Foam tablets. They do not leave any bleach smell like the clorox sanitizer does. Also get one of those sanitizer buckets from Restaurant Depot and one tablet per bucket gives you the right concentration. Also, make sure you have the PH test strips handy to show the inspector.

For your FDA inspection, depending on your size and how far you distribute, they may do a quick once over and then make a note that the state BOH inspection is enough. Except, of course, if you are going to import coffee which requires that you file for prior notice.

Also, never, EVER, EVER, argue with an inspector. You're just asking for trouble. Instead, just politely ask questions on what would work and what wouldn't. Also, next year when they send a different inspector, DO NOT say the words: "well...last year's inspector said this was OK". They hate that. Just take a deep breath and calmly ask polite questions that gradually point out the contradiction.

I could bend your ear for about two hours on the subject but I'll spare you.
