This is what I have on my ipad. It's mostly used by a toddler, and has worked amazingly well. It includes a screen protector and a folding stand. The screen protector doesn't detract too much from the retina display. Best Buy will price match amazon as well, if you don't want to buy online.
I would suggest putting it in a Griffin Survivor case if you are going to use it in the classroom.
My kids have had 16 GB iPad 2's for years, and there is very little that they can't do with them. But the fact that you only have one means it would have to be used by your students, one at a time, for some sort of self-directed study. Maybe watching an educational video or using an educational app.
