So I've been working on my Pad Thai recipe. Some of the best Pad Thai I've had was from a particular cooking teacher in Thailand. I recently asked him to send me his recipe. Here it is:

SEASONING SAUCE INGREDIENTS SERVING: 1 person

3 tbsp tamarind juice/paste (from the tamarind block - using Andy Rickers tamarind paste recipe)
3 tbsp palm sugar
2 tbsp fish sauce
2 tbsp shallot, minced
1 tbsp chili paste
1/4 tsp black soy sauce
1/2 cup water


How to make the sauce

  1. Coat the bottom of the pot with a thin layer of oil, heat on medium, cool shallots until just translucent.
  2. Add the rest of the ingredients into the pot.
  3. Cook to thicker consistency, coats the back of a spoon.
  4. Turn off the heat then blend it with Stick Blender.
  5. Taste for seasoning.

    *As for the peanut flavor that's in Pad Thai. That just comes from crushed roasted peanuts. You'll want to add some in the pan near the end of cooking and serve some as a condiment. If you'd like the full Pad Thai recipe let me know.
