/u/ripshitup - with a $500 camera budget, you can produce video that looks like this:

Hello /u/reypro - with your budget, I would get a Panasonic FZ200 and a top mounted professional shotgun mic. If you can get close enough to your subjects, you should be able to hear what they are saying.

Here's a list of the equipment you would need:

Hi /u/marveloption - I started out with a T2i, and I currently have the GH1, GH2 and GH3 ([here] (https://lh6.googleusercontent.com/-gVr8wdjjVyU/UpnGGaj0IfI/AAAAAAAAIS0/dHBNsFcCxGs/w815-h543-no/S1030005.JPG) are all my GH cameras, plus the BMPCC) - and my answer is yes, the GH1 (especially hacked) is still a great camera to learn on. "Pros" are that it has a viewfinder that works while you're shooting video (Canons don't) and, with Panasonic/Olympus/Sigma system lenses, it has autofocus that works while you're shooting video (the T3i doesn't).

A couple of "Cons" are that it doesn't have manual audio gain, and, like the GH2, it has a 2.5mm mic input jack (requiring the use of an [inexpensive adapter] (http://www.amazon.com/gp/product/B000QU3JN4/ref=as_li_ss_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000QU3JN4&linkCode=as2&tag=battleforthew-20) for standard mics) - but it still produces great images:
