/u/ripshitup - with a $500 camera budget, you can produce video that looks like this:
Travel and Nature
Documentary
Slow Motion
...with a used Panasonic FZ200 camera, a fluid head tripod, an external mic and a decent audio recorder and a setup that looks something like [this] (https://photos.google.com/share/AF1QipPjHD74KVKGvxRfDnyjeFKkqiiinsjQxTz8k4GYZzWTHf38SZqoG7doGw16t4tT1A/photo/AF1QipNftMS5ujNIs1hmul_VbmCabL58vVWkgn6fxQOq?key=aDlyWlNPdGwtSFBTSGMyVWlfWG5VWG5tUm9SY3hR).
The FZ200 has a 24x constant f2.8 power zoom, 1080/60p recording, 720/120p slow motion and a mic input. It is a very good value for the money.
Here is the parts list for the setup:
For a total of $489.65, you should be able to tell your stories with high quality 1080p images and 24-bit/96kHz sound.
Hope this is helpful and good luck with your documentaries!
Hello /u/reypro - with your budget, I would get a Panasonic FZ200 and a top mounted professional shotgun mic. If you can get close enough to your subjects, you should be able to hear what they are saying.
Here's a list of the equipment you would need:

If you set the camera to "iA" (Panasonic's automatic mode), you should have a simple, autofocusing camera with a power zoom that even a novice can use to produce usable video and sound.
Hope this is helpful and good luck with your interviews!
Hi /u/marveloption - I started out with a T2i, and I currently have the GH1, GH2 and GH3 ([here] (https://lh6.googleusercontent.com/-gVr8wdjjVyU/UpnGGaj0IfI/AAAAAAAAIS0/dHBNsFcCxGs/w815-h543-no/S1030005.JPG) are all my GH cameras, plus the BMPCC) - and my answer is yes, the GH1 (especially hacked) is still a great camera to learn on. "Pros" are that it has a viewfinder that works while you're shooting video (Canons don't) and, with Panasonic/Olympus/Sigma system lenses, it has autofocus that works while you're shooting video (the T3i doesn't).
A couple of "Cons" are that it doesn't have manual audio gain, and, like the GH2, it has a 2.5mm mic input jack (requiring the use of an [inexpensive adapter] (http://www.amazon.com/gp/product/B000QU3JN4/ref=as_li_ss_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000QU3JN4&linkCode=as2&tag=battleforthew-20) for standard mics) - but it still produces great images:
If you can get one with a lens for less than $250, I would jump on it. Sadly, the only one I can find with a lens for below $250 on eBay right now is [this one - with a 50mm f1.8 Canon lens] (http://rover.ebay.com/rover/1/711-53200-19255-0/1?icep_ff3=2&pub=5575034783&toolid=10001&campid=5337235943&customid=&icep_item=171278056601&ipn=psmain&icep_vectorid=229466&kwid=902099&mtid=824&kw=lg).
Hope this is helpful!
