thanks a ton for responding. my biggest concern was how much area they'd need, and you really helped confirm my general assumptions. what i've decided on are these:
25 puzzle mat tiles: 2' x 2' x 3/4" each (~ .61m x .61m x 1.91cm) to form a 5x5 tile square. these were just about the best balance of thickness, price, and reviews that i could find.

i also bought a 4' x 8' x 2" (1.22m x 2.44m x 5.08cm) folding mat for the break falls & throws/techniques. these mats had good reviews and pricing.

we do have an 8' + ceiling (right around 2.5m), so i feel pretty confident about these purchases now. thanks again.
use some EVA floor mats in your playing area. It will reduce the noise and the strain of playing standing.
