So I recently purchased a new flash trigger/remote to use with my flashes both with my digital camera and also my Mamiya RB67. I know that the mamiya doesn't have a hotshoe, but it has a pc sync port on it. Soon after receiving it, I see that the transmitter does NOT have a 3.5mm plug on it, which is a pretty big bummer. So after a little research it seems like my best bet is to go from the PC sync port in the lens, into a hot shoe adapter like this, then the hot shoe adapter with the transmitter attached. I just want to confirm that this will work before I order a hot shoe adapter and learn that it won't work for whatever reason. Thoughts?

Correct. A PC or TRS (2.5mm, 3.5mm, 6.35mm audio jack) connector can only make two connections: sync and ground. On the flash foot, the pin is sync, the plate is ground, and shorting sync to ground is the signal to fire the flash. With the PC connector, the outer ring is ground, inner ring is sync. TRS, base is ground, tip is sync.

It depends on the ports you're trying to connect. :) PC ports require a PC (Prontor-Compur) connector. TRS jacks require TRS plugs. The Godox TT600/TT685/V850II/V860II speedlights all have 3.5mm sync ports, so that end of the cable can be a simple mono/stereo 3.5mm audio plug (like a headphone jack). If whatever's on the other end is also TRS, then you can just use simple audio cables/adapters. But if it's PC, then you'd need a male PC-to-3.5mm cable.

The G7, iirc, does not have a sync port, so you can't cable the flash directly to your camera (that little 2.5mm port on the side of the camera is a shutter release, not a flash sync port). You'd have to get a hotshoe to sync adapter to cable a flash. But if you get one that's 3.5mm, you can just use a simple 3.5mm audio cable.
