I have this waterproof mattress protector and it's great! I just leave it on under my sheets until I do any watersports and then I'll wash it with my sheets. I never have to think about it or plan ahead, and you can hardly tell it's there! No leaks so far, it stays centered on the mattress well.

We use these together and have survived accidents. The first is really thin and the second is a more traditional mattress pad so you can put one on top of the other.
