There are a lot of answers to this. Moon Knight has had many series since his creation in the late 70's. There are fans who prefer the Classic Moon Knight, fans who prefer the Modern Moon Knight stories, and then people like me who love it all (except the early 90's trash). If you want the classic Moon Knight, which was written by Moon Knights original author, and his defining artist, I recommend the Countdown to Dark TPB. If you like the tone of those, your next step is to go for the Essential Moon Knight's 1, 2, & 3. These will cover the Origin stories, the major villains, the most important story arcs, and has some of the best comic art of the time. Keep in mind, all of these stories were written in the early 80's, and they are a product of their time.

For a more modern Moon Knight story, you really have two good options. You can either try the Huston/Finch Run by getting Moon Knight: The Bottom (and continue to volumes 2-5). They are a decent enough place to start on Moon Knight if you have no background on him. These stories tend to be very dark and very edgy compared to previous Moon Knight stuff.

What most people seem to be doing, however, is starting with the most recent run by Bendis/Maleev. It is titled quite simply Moon Knight This series is pretty self reliant, and seems to be very popular.

You can get Moon Knight volume 1 and 2 by Brian Michael Bendis I sort of saw that as the start of the modern Moon knight that leads into Marvel Now Moon Knight which is currently running.

However previous to that is the more commonly known version of Moon Knight who still has some supernatural powers, and does some more superhero-y stuff. Modern moon knight doesn't have the moon powers anymore and does more detective or smaller scale stuff

They just finished volume 1 of the new run of the comic, but it is very much so a very different Moon Knight from how it used to be.

In pure superficial terms, he's easy to dismiss as a Batman ripoff, but he's not. I'd highly recommend Bendis and Maleev's Moon Knight, fucking great story:

I am a Moon Knight fan myself. Bendis had a really good run in 2011, and it had really neat artwork, too. His personality is a lot less dark and more of the "one-liner/joking type" of hero. There were only 12 issues, but it is definitely a great start and it is part of what leads up to Age of Ultron if you wanted to check that out. I really love the West Coast Avengers, which is a comic from the 80's. Moon Knight isn't there the entire time, but he joins the team and plays a pretty big role throughout. It also has a little bit on his origins in that one. Moon Knight is also in the 2010 Secret Avengers, but I haven't read any of that one. I myself want to check out the 2006 run. It seems to have nice art and I have heard it is very brutal in it's action sequences. One thing to keep in mind about reading Moon Knight is that he changes a lot depending on the writer. Sometimes he is killing for vengeance and other times he is battling for justice. I could see this turning people away from trying to read Moon Knight comics, but I think he is overall a really cool superhero. Almost like Batman with Schizophrenia and an oath for eternal servitude to an ancient god (who is sometimes a scary half-bird-man).
