What a cute idea!

I instantly thought of a DIY passport of sorts...like this: Hike Passport

They also have a National Parks Passport (same company)

But there's actually an official National Parks passport (and apparently you can get stamps at all of the National Parks?!)

You could put a picture of you two from each hike...dedicate pages to hikes you plan on taking...and passports are small enough where you could make and collect multiple “passports” as the years go by (New England passport, Southwest passport, Chile passport...wherever!)
