I was asked by a few people to post this so here we go! Here is the standard recipe for no-bake cookies that I base mine on

So I make some tweaks to this recipe to make it healthier/less sugar which is why people asked for it. First, just as a note, I use creamy peanut butter, not crunchy. I don’t like having chunks of peanuts in mine. Also it says to use a teaspoon of vanilla extract, I think this is too much. The vanilla is very strong and can quickly dominate the entire batch, so I only put a few drops in.

So the two changes I make are using almond milk instead of real milk and substituting sugar with Erythritol. If you wanted to make this recipe vegan, all you would need to do is use Earth Balance or something instead of real butter.

This is the erythritol I started with to test it out. Disclaimer – although this has no effect on the taste, it did make my cookies turn kinda white for some reason. Don’t be surprised if this happens! I use the erythritol exactly like the sugar in the recipe, 1 3/4 cup.  I read that erythritol is supposed to be a little weaker than sugar so my first attempt I used 2 cups and the cookies ended up tasting like little sugar bombs, but of course YMMV.  

So all said and done I was able to get 31 cookies per batch, coming out at 75 calories each and 1g of sugar per cookie (likely in the peanut butter). The easiest way to get 31 consistent cookies is to use an ice cream scoop to put the cookies on the wax paper. They aren’t huge cookies, but at 75 calories a pop I usually eat two. I personally didn’t log the erythritol in my recipe, since it’s 0 calorie, but if anyone is watching carbs, it is a lot of carbs.

The first rule to remember: Muscles are made in the gym, but revealed in the kitchen.

Let's assume you have exercise covered. What about diet? That is where a lot of people struggle. They go on a diet instead of making a change to their diet. That seems subtle, but it is an important hair to split.

If you haven't seen it, /r/keto is very popular right now as a way to get lean without necessarily getting mean. You aren't going to starve yourself, go on a juice cleanse, or only have unpleasant meals ahead for the foreseeable future. This is where you reboot your diet looking to get rid of empty sugar and loads of unneeded carbs.

Start by taking an inventory of what you eat for the day. You aren't going to be focused on the calories. Those will come later. For now, we only want to look at serving size, sugar, and total net carbs. You can look on the back of your favorite snacks to get an idea of it. Serving size is always important because some will try to be sketchy by placing 1/3oz or 1/3 container on the package. Unrealistically small portion sizes don't help us.

If you're like most people, you likely consume between 40 and 100+ carbs for every snack. In some cases, people are consuming hundreds of carbs per meal every day. That can be cut by 95% or more without struggling to find something to eat. It is even easier if you cook at home.

For breakfast, a low carb biscuit or low carb muffin could go with eggs, bacon, or other proteins. With sugar free syrup or jam/jelly, that is an on the go low carb breakfast that most won't mind.

For lunch, a low carb sandwich (low calorie bread is usually low carb!) is easy by checking your local grocery. Breads that advertise low calorie cut the sugar used in the recipe among other changes to reduce the carbs. You could cut 20-25g per slice down to 7g or lower.

For dinner, BBQ with sugar free sauces, have seafood with reduced sugar ketchup/cocktail sauce, or whatever you can dream up.

For dessert, sugar free chocolate syrup on top of no sugar added ice cream, whipped topping, strawberries, or even cheesecake made with low carb pie crust. By using real rare sugars instead of chemical sweeteners, you get better products that taste like their traditional counterparts. Allulose and Erythritol are a good place to start.

At this point, we will assume you have worked to cut your sugar intake down from hundreds of carbs per day to less than 20 - 40. After a few weeks of this, off the shelf processed savory foods with added sugar will taste overly sweet. That is how you know you're on the right track.

Once on keto (or very, very low carb), your body will be burning fat calories day by day. /r/fitness will have more on this idea, but it goes something like this:

Calculate your total daily energy expenditure, reduce your calories by a comfortable amount while maintaining strict watch on carbs (as few as possible!), and calculate the daily loss. If you're down 300 per day, you'll lose about 1 pound per week. That is some very solid progress that you can maintain over time.

I order my groceries through FreshDirect so technically I get 90% of my stuff online :).

That being said...the stuff I get outside of that site are:

  1. Japanese Mayo to make the spicy mayo that you get at sushi restaurants (just mix in Siracha).

  2. Emergen-C Electro Mix for my electrolytes kick.

  3. Erythritol cause....sugar.

  4. Stevia for a different sweetener used in mostly drinks/liquids where it's more difficult to dissolve the Erythritol.

For the most part I avoid sweeteners, as I didn't really enjoy sweet things before.

That said, I have used Erythritol a little when I had to.

Erythritol. It's got the lowest glycemic index of sugar alcohol sweeteners and also none of the laxative effects since the body does absorb it.

Different brands seem to me to taste a lot different. My favorite is Wholesome brand, but it's expensive. So far best bang/buck has been Now Foods:

Erythritol: I haven't seen it in store yet, except Truvia- www.amazon.com/gp/product/B007XA49BG/
While it lists carbs on the label, these aren't counted toward net carbs.

Potassium: I usually just work in about a tsp a day of Morton Lite Salt. Keto rapidly flushes electrolytes, especially in the beginning and this is usually the cause of all unclear thinking, discomfort, and fatigue. I usually make ketorade which is just lite salt + artificial mio flavoring.

This looks great, but does anyone know if the erythritol should be counted toward carbs? The product the author linked shows 4g of carbs from erythritol (not sugars) per tsp. The recipe calls for 1/2 a cup. Thats 24 tsp -> 96g of carb in the recipe. This quadruples the carb total of the recipe.

It looks delicious, though... hoping either the erythritol carbs don't count, or there are lower-carb version of the linked product out there.

Most recipes that I've seen are using Erythritol or similar but there is a mint-like cooling effect so some people like blends of Erythritol and Stevia like Swerve, which is of course more expensive. There is also Xylitol but it is toxic to dogs in case you have one.
 
There are a lot of sites with information on keto sweeteners including their GI and I highly suggest doing some research to determine which meets your needs and tastes. You will also likely have to try out a few. Also be aware that the taste of the same product (e.g. Stevia) from different brands (e.g. SweetLeaf vs NOW Foods) can be slightly different to people.

I use the NOW Foods brand Erythritol. It's all natural (and, actually natural, here's how the company defines natural).

It's pretty much the closest thing you'll get to sugar on keto. It's about 70% as sweet as sugar and has a GI of 0 (10 carbs/40 calories per cup - as opposed to 200 carbs/800 calories a cup for sugar), and a fairly pleasant aftertaste (it's got a cooling effect like mint, but it's a lot milder if you powder it in a spice grinder).

Also, have you tried unprocessed Stevia leaves? I used to be in the same camp as you, but the real stuff actually tastes pretty solid, like a sweet green tea. I like brewing it with tea or blending it with Erythritol to make "Truvia". This is the brand I use.

If you're still looking for a sugar substitute and don't like Stevia, maybe try erythritol. I've been using it in some stuff for the past few weeks, and my husband hasn't even noticed. He can't stand diet soda or any type of fake sugar. It's 0 calories, and it smells pretty funky, but it tastes pretty much just like sugar and looks like it, too.

They probably do. I don't really shop at whole foods though. A bit pricey and I rather support a more local health food store thats been in the community for decades. I bought mine from Amazon though.

EDIT: If the bag is just for yourself, then 2.5 pounds is plenty.
