Ingredients

2 large eggs
1 can pumpkin puree (15oz)
2 tbsp maplesyrup
1 tbsp canolaoil
1/4 cup sugar
2 cups all-purpose flour
3 tsp baking powder
1 tsp baking soda
1 1/4 tsp ginger
1 1/4 tsp cinnamon
1/2 tsp cloves
1/4 tsp nutmeg
1 tsp vanilla
¼ cup semi-sweet chocolate chunks (add a lot more)

Instructions

Preheat the oven to 350 F. Prepare a 9x5" baking pan with parchment paper.
Place eggs, vanilla extract, sugar, pumpkin puree, maple syrup and canola oil in a standing mixer and blend until smooth.
In a large bowl, sift together the flour, baking powder, baking soda and spices.
Fold the dry ingredients into the wet with the chocolate chunks
Transfer the batter into the prepared baking pan and smooth into an even layer.
Bake at 350 F 35 minute or until a toothpick can be inserted clean.
Cool the bread in the pan after removing from the oven for 15 minutes. Then remove from the pan and let it sit another 60 minutes before slicing and enjoying. (I like to microwave leftovers to melt the chocolate chips)
