I learned from the food network (Alton Brown) that you almost never use extra virgin. If you're putting it in a skillet or in the oven you almost always are going to need a higher smoke point than that. It's why I have two of these, one with extra virgin for sandwiches and salads and the other with extra light for cooking. It really does make a difference; I don't set off my smoke alarm when I cook stuff in the cast iron anymore.
I heard that Alton Brown hates Rachel Ray. I could believe that because I also heard that both of them are mean IRL.
I've been fooling around with a device to measure oil w/o a pump. I make varying amounts ketochow between my wife and myself... 4 meals a day between the two of us. This looks like it may be promising.

I do all of my mixing by weight, even liquids. The dropper would work better in that situation.
