Usually, you heat the ingredients together after blending them and that will pasteurize the egg. But, yeah, the egg yolk is mostly there for the lecithin content. You can substitute with roughly 1.5g fine soy lecithin. Don't get the granulated kind.

Also, if you replace the yolk, you may want to add a few g of fat from another source since fat content is also very important to the texture. For example, you could go with all whole milk.
