I use a Quik Lok DX749. Amittedly it is the only one I have tried, but I have no complaints about it.

I found this which looks pretty goofy but fits the adjustable but not rolling or swiveling criteria

And i also found some adjustable fixed chairs by searching "adjustable piano chair" because obviously a pianist wants to not roll around as well. Those dont look like they have soft backs though, and i am seeing chairs meant to be leaning forward instead of back
