For sure: Star Wars Heroes for a New Hope. I got it given to me as part of a reddit gift exchange last chirstmas, and it is a great book.

I'd say the easiest place to find hardcovers is amazon. The Darth Vader hardcovers are split over two volumes. Seems like you have the first one. I found some hardcover links for you on amazon:

Hardcovers don't seem to be released very often. Only the ongoing series seem to be getting them. Mini-series like Princess Leia and Lando, for example, only get trade paperbacks (aka TPBs). TPBs are your go-to collections of 4-6 issues of a mini-series or an ongoing series arc.

At the moment, yes. However, Darth Maul - Son of Dathomir, which is canon was originally made by Dark Horse, but is getting a Marvel TPB re-release this Fall. IDW is also releasing canon Star Wars comics aimed at a younger audience starting this Fall.

Depends on how deep you wanna go. I'd say since you've started with Darth Vader Vol. 1 hardcover, get the second volume, it combines 17 more issues and completes that comic's storyline. From there, it depends how deep you wanna get. If you wanna go all in, like me, just buy everything. There are definitely some comics, I would not recommend like Princess Leia and Chewbacca, though. If you're looking for a reading order, I'd say it goes something like this:

Star Wars issues #1-12
Darth Vader issues #1-12
Vader Down crossover
Star Wars Annual #1
Star Wars issues #15-19
Darth Vader Annual #1
Darth Vader issues #16-25
Star Wars issues #20-30
Star Wars Annual #2
Doctor Aphra #1-6
Screaming Citadel crossover

The rest of the series have no crossovers and can be read in any order, but I would suggest reading Shattered Empire before starting Poe Dameron, as Shattered Empire is about Poe's parents.

Edit: Apparently, the Princess Leia, Lando, and Chewbacca comics were also collected in a hardcover.
