What you probably want is the The Complete Saga. It's the most updated versions of all 6 films. I believe it has 3 bonus discs.

Or you can buy the OT and PT trilogy blu ray sets separately, it's the same versions. I believe you get the dvds as well, if that's your thing. But it seems you already own some dvds anyways.

Edit: If you really want to impress your hardcore fan employees, have the limited editions of A New Hope, The Empire Strikes Back and Return of the Jedi as a giveaway. Those specific releases of the film contain a bonus disc that has the last time that the original theatrical cuts of the films were released. Most releases of the films since '97 have had various changes made to them that some really hardcore fans dislike, so copies of the theatrical cut are highly sought after by certain fans.
There's a blu ray collection of the movies that contains 40 hours of extras in it. Its about ~$90USD right now and I already have all the movies on blu ray and wish to buy the extras but without buying them again. It says there's "3 bonus disks" here:
