And there are chocolate bars that have even fewer carbs. I actually like the taste of Wicked Dark over some 85% dark chocolate bars. The texture is a bit dry, but the flavor is really good. I also jus like saying Wicked Dark in a Boston accent; even though I'm not from nor even visited Boston.

I bought some 95% and it was bitter as heck, but i loved the stone ground texture. i'll eat a piece every now and then..

What is the difference between this and the many 95-100% chocolates available on, say, Amazon? Even major producers like Lindt have them - can even get these at my grocery store! Or am I missing something?

There are a bunch of different 99% or 100% cocoa bars. I've found that they have very different taste, and all of them are way better than the bakers chocolate I remember as a kid. That was super-hard, difficult even to eat. The new ones, prepared as chocolate bars, are much smoother and more delicate. Some have a bit of grittiness. Others are super-smooth. Some are thicker and harder to bite. Others thinner and easier.

My current favorites are L'Amourette Gold 100% and Michel Cluizel Noir Infini 99%. I also like Wicked Dark 95%. It's not quite 100%, but the carbs are almost the same.

They are intense. A little goes a long way.
