Off the top of my head, I would recommend the following in a heartbeat. These are all well-researched history books/primary sources. They aren't easy reads by any stretch of imagination.

Jagan Pillarisetti and Samir Chopra, The India-Pakistan Air War of 1965
Jagan Pillarisetti and Samir Chopra, Eagles over Bangladesh: The Indian Air Force in the 1971 War. Pillarisetti and Chopra's books are the best IAF histories out there, bar none.
Nitin Gokhale, Beyond NJ 9842: The Siachen Saga. The most comprehensive history of the Siachen conflict yet.
Gen. V.P. Malik, Kargil: From Surprise to Victory.
Dr. Sanjay Bardi-Maharaj, The Armageddon Factor: Nuclear Weapons in the India-Pakistan Context
Raj Chengappa, Weapons of Peace: The Secret Story of India's Quest to be a Nuclear Power. WoP and TAF are probably the best books on India's nuclear weapons and their history.
Air Marshal Philip Rajkumar, Tejas Story: The Light Combat Aircraft Project. Air Marshal Rajkumar was the director of the Tejas project around the time it made its first flight.

Fiction wise, Vivek Ahuja's Chimera is excellent. It isn't without its shortcomings, but it is way better than the Aniruddha Bahal/Humphrey Hawksley crap out there.
