The amount of CO2 that can be absorbed by the water is inversely proportionate to the temperature. You should try to get the temp down below 40°F, the closer to freezing (without freezing) the better.

You didn't mention what pressure you are using. 45psi gives me pretty dang zippy water. You can also try adding a carbonation stone to your setup to help dissolve the CO2 into the water.

I use these

For a long time I just used regular mason jar lids and just let the pressure out everyday but then one day I heard a pop and the pressure had actually caused the lid to deform. I've used the airlocks ever since.

I use these to hold everything down. I know there's more purpose specific things you can use but I already had a dozen of these blender balls laying around.
