Surprise! You can get new ribbons! I bought one several years back, but never Installed it because the old one still worked (I've had the printer 5 years or so... no idea when the original owner installed the current ribbon).
The standard size of ribbon is 0.5 inches wide on a 2 inch spool. There are lots of sellers on Amazon that sell ribbons. Some googling revealed that it should uses a figure 8 power cable you should be able to see if there's a port on the typewriter that looks like if that cable could fit, you might already have one of these cables at home! That's easy enough to buy locally.
However, the biggest issue of this is that even if is running and it doesn't need to be serviced (it most likely will be running fine, Panasonic, made in Japan, type writers are usually built like a tank.), you won't be able to find the correct ink ribbon (the ink cartridge of typewriters) without importing it from overseas.
The typewriter will most likely already have a ink ribbon cartridge inside. Though it will also most likely be dried up. Is still worth plugging a power cable, load some paper and give it a go though! Faint characters are better than no characters!

I have a typewriter that I bang on occasionally, and I've bought similar "universal" ribbons in store at Office Depot. All office supply stores carry them.
Now threading those new ribbons onto your old spools is where the fun comes in. That ink will get everywhere if you let it. Although you may just be able to drop the plastic spools into your machine as is--but where's the fun in that?

Selectrics, with the exception of the the Model 72 (Selectric I Fabric ribbon) only have third party film ribbons available new, the Model 72 which used the fabric ribbon cartridge has nylon ribbons available for it.

These are the ones I use, 12 ribbons for $12 and they work just fine, they don’t have grommets to trip the ribbon reverse, but if you tie the ribbon in a knot at both ends it does the same thing.

I don't know anything about that model, but $25 for a new ribbon seems really high. OP, the GoodWill listing photos indicate the machine was made in Spain. That is where very good Olivetti typewriters were made. So, if it's in working order, I think this is a good bet. It's likely to have been made at a time when typewriters had to be competitive, and craftsmanship-level was high.
The typewriter ribbons are basic and can be found on Amazon, eBay, and at office supply stores. They're still made.

I once saw this planner (or one really similar to it) on Pinterest and always thought it looked awesome: LifePlanner
I think this could make for a great gift because it is customizable- you can choose colors and styles that will make it more personal for your friend.
I would also get some nice pens and highlighters in multiple colors for color coding, and maybe other cute office supplies like binder clips. I love the office supply section at Target, Michaels, and TJ Maxx, so those might be great places to look!
Another idea could be a purse caddy/organizer similar to this one.
My final suggestion would be either an electronic label maker or a laminator . These may seem like strange gifts, but they are super practical for getting organized and keeping things tidy. My mother-in-law is insanely organized- she’s received both of these as gifts and loved them! The label maker I linked is on the pricier end, but they sell similar products for much less.
