My last NYS pizza was good, but I wanted a better crust. I aged the dough this time for 3 days and fell onto an old school ingredient that home baker's would use to improve the exterior of the dough and provide lift. That ingredient is, believe or not, Carnation Malted Milk powder! Just sub it for sugar.
The crust was incredible. It browned as wanted, was very crispy, with tons of bubbles on the bottom and the interior was very airy. There was a slight cheesy flavor to the crust. Reminds me of the flavor found in cheesesticks. I really like the flavor of it and plan to continue using this recipe but if people notice it too much and don't like it I will scale back to 1 tsp of malted milk powder.
Pizza Analysis.
Note: I have a bottom broiler oven.
Recipe is 340g of King Arthur Bread flour, 215 g of Philly water, 1/2 tsp of instant dry yeast, 2 tsp of diamond kosher salt, 1.5 tsp of Partanna olive oil, 1.5 tsp of Carnation Malted Milk.
Mix all ingredients until shaggy dough ball forms then let it autolyse for 30 minutes. Then knead in mixer for 10 minutes until dough ball becomes smooth. Put in fridge to ferment for 72 hours.
Take dough out of fridge and let it come to room temp, about 2 1/2 hours. Put baking steel onto top rack and heat up oven to 500 degrees. Stretch the dough out and place on a 16-inch pizza screen. Top with pizza sauce, parmigiana reggiano, Maggio brand whole milk low moisture mozzerella (8oz), Maglio hot italian sausage (cooked and sliced into discs), 1 shallot (julienne) and Cento pepperoncini (julienne).
Pizza sauce is 1 pack of Cirio plain crushed tomatoes (12oz), 1 minced clove of garlic, 1 tsp of olive oil, 1 tsp of freeze dried oregano, 1 tsp of onion powder, and a sprinkle of salt. Blitz with an immersion blender until smooth.
Place pizza and screen directly onto steel in oven. Let dough set for 5 minutes, turn 180 degrees while on screen and then place pizza directly onto steel. Cook for 2 minutes, then turn and cook another 2 minutes.
Take pizza out and place back onto screen and put it into the bottom oven to broil. Make 90 degree turns every 15 seconds for a total of one minute. Let pizza rest on screen for 1 minute. Then let pizza rest on cutting board for one more minute.

My non-japanese friends love it too. They are puffier than cheese doodles and have a lighter flavor. (Green bag is cheese flavor and Yellow is a "light" flavor has a hint of fish broth)

Hard to pinpoint it's flavor but it's good. The biscuit is the same stuff as Pokey. Get the salad flavor. Original is just a Pokey without chocolate :(

OMG. My latest obsession centers around food. I <3 food, and this obsession is absolutely, heaven sent amazing!!
Seriously. It's like a party in my mouth. The Angels are singing whenever this food touches my tongue. If I had known this existed before we bought a bag for our kids (who don't care for it...whaaat?!?) and I tried it, I would have bought it a long time ago.
This is my latest obsession, the object of my affection. It is SO GOOD. I think this stuff is so disgusting. To me, it tastes like how I imagine what poop tastes like.
If I don't have a bag of that, I literally go through withdrawals. If I could, I'd put it in an IV and eat it that way all the time.
I have some of this stuff on my wishlist. However, it is an add-on item.
