Here’s what I would do. See color code below.

Green is couch + chair

(A small couch like this plus an accent chair like this.)

Yellow is coffee table

Blue is TV

Red is bar stools

(Like these, which can slide under the countertop so you can have a walkway behind the couch.)

As for not wanting to get water from the sink on the couch, why not put up a splash guard while you’re washing dishes?

Use grapeseed oil instead of Canola or olive oil for cooking in the skillet. It's fairly easy to come by and has a consistently high smoke point. Canola oil is hit or miss depending on the brand.

Doesn't have to be that specific one - just any splatter screen with a charcoal insert. Bad, Bath & Beyond carries them as well if you have a 20% coupon laying around.

You need a splatter screen, which you just lay over the pan. They're usually pretty cheap, and you can cook bacon or minute steaks with less fear of horrible oil burns. I have a set of three, like this.

However while I was looking at Amazon I saw this interesting High Domed Splatter Screen. I kind of like the dome idea. Might have to try it.

They're talking about this. Its a thick foil shield you stick around your stove. It is basically a temporary splashback. The Amazon one doesn't have magnets but some of them do. Search for "foil splash guard" on Amazon and you'll get lots of them.

An island stove isn't ideal, especially if you cook with high heat often. If I did, I'd probably buy 1 or 2 of these, or even better find a local sheet metal shop and have them make something to fit. Ideally you'd have a little shield that would go from the stove up to the range hood and would really contain a lot of the splatter, and could be easily folded down and cleaned.

If you want to minimize the effects of moderate splatter, I suggest a splatter screen. Allows the food to breath but still contains the oil.

I use pretty much the same setup and had a couple of stuck sparges so I took a splatter guard and removed the handle and put a small hole in the center for the siphon. Works great now. Example of what I had in mind. It has all the components you mention plus, they sell these handy little gadgets called splatter screens which really come in handy even if you're just shallow frying in a pan.

And I've been pouring bacon grease down my kitchen sink drain for the past 7 years without a problem. I just turn on the disposal, pour it down, and chase it with some hot tap water.
