As best I can see, the TV ears thing supports RCA audio inputs (the two jacks with white/red colours), correct? And Sony's website says that you can use either HDMI ARC or optical output for sound, so...you've got two options:
Either of those should do a decent job. The end result will be either an optical or HDMI cable to the converter box, then an RCA cable to your TV Ears - while still keeping the TV's internal speakers operating for your mother.
I've only given those two products as examples - you might want to shop around and find something cheaper or better - I did notice some of the reviews for those on Amazon mention issues with lip sync (eg, the audio has a bit of lag and looks off in relation to the actor's mouth when you watch something), so they may not be the best ones to buy - but it's up to you.
