for your HT center speaker, you should mount it ear level to get the best soundstage. Since you don't have a tv stand, you can use something like this to mount it up. I'm sure there are cheaper alternatives out there.

Yes, 5.1 would need to be activated and the content would need to be 5.1. However, most every single program is these days, so not to worry. A center <4" tall is hard to find, and since you want it the sound signature to blend with the speakers you have now, I would say yes to that Polk center and yes to an above mount, just make sure it can hold the weight, which that bracket you listed is 10lb too light. You probably need something like this.

2 screws in each one, both into studs. It came with wall anchors too if studs were not possible. Seems Rock solid so far.

most centers have both a rear port and a keyhole hanger.

from my experience the center channel is almost entirely used for speech/voices in movies, so you really arent going to be blowing a hole in the wall with that.

That said I don't know how the center speaker performs in all channel stereo, or other settings.

If you are concerned about mounting directly to the wall you can find fairly cheap arms like these. although likely more useful for a sound bar they can do the trick with relatively little disruption to the look of your setup. (just make sure you know how to mount things to your type of wall)
