While I'm sure this was one of those "I need it working now" things, they actually do make real adapters for this purpose.

Works great if you have some UTP already wired in but need analog audio. Don't expect audiophile quality but it works surprisingly well.
So I just looked into how to do this in REW, it's actually not that complicated, the REW help manual (https://www.dropbox.com/s/zdhq72a1puyyxpr/REW%20101%20HTS%20Current%20Version.pdf?dl=0)
Pg 105 shows how to make pre-out measurements using an RCA to 3.5mm plug into a "line-in" connection on a laptop. The only difference would be you would need an ethernet to 3.5mm cable(https://www.amazon.com/3-5mm-Audio-Socket-Ethernet-Adapter/dp/B00NIGLFV6) to do this but it would basically give you the exact signal with whatever DSP corrections that go into it.
