Not assistance work, but micro plates were really useful for me on OHP and even bench to make progression when 5lb jumps are too much.

DB pullovers, dips, and incline DB bench press are my go-tos for bench assistance.

Sure, so check these out. They are pairs of 1/4, 1/2, 3/4, and 1 pound plates (calling them plates is a bit of a stretch though). Look around and you can get them in 1 pound, 2 pound, 3 pound, etc. So instead of trying to increase by 5 pounds or 10 pounds or whatever, and failing, just try an increase of 1 pound. Then when you can lift that, try 1 more pound. Keep it up like this and you'll make small, incremental increases which is better than stagnating. Usually you don't have to train like this forever, it can be used as a good plateau buster.

Overhead press is a classic exercise that justifies the use of fractional plates.

It's a very common thing, but not for dumbbells.

Probably micro plates. Serious lifters use them when they've nearly maxed out their strength and try and break plateaus.

I go up by 5lbs total on lower. I also will sometimes redo a weight if I felt weak but got my 3x5. I also sometimes take an extra day rest if I really feel I need it and just push the week down a day. And my goal is to get the 3x5 of the increased weight so I take 5 minutes between my 3 working sets. If I only took 3-4 min I would fail and deload twice as much.

We used some small excercise weights, but here is a link to a diving weight you can buy in sizes from 1 to 12 lbs.

For something more precise, something like these may be better, albeit more expensive.

The piece we used is closest to this one, which allowed us to run a rev extrusion through it to mount it more securely.

In all honestly, each of the weights above should work more or less the same, but which is the best will depend on how much weight you need to add, and where you can mount it.
