Start recording her life. Make home videos for the next generation. Take pictures of her. Most of all learn about her. Make use of the time left and when she's gone, take some time to grieve. The best thing you can do is to be supportive of him. You'll make it through this, even though sometimes that will seem hard to believe.
Also, All About Me is a neat book that you could give her to fill out - it asks all kinds of questions from the silly (what's your favorite color) to personal ones (what's your best childhood memory).

I wish I had done something like this with my Mom before she died. I think it would have been fun to interview her and have a video of her telling the stories rather then a book.
