If your USB-C port is actually a Thunderbolt 3 port, then this will work. If not, no dice.
USB to Firewire can't exist, they are topologically different.
Remember this will NOT work for JUST USBC, it must be a Thunderbolt 3 port.

What kind of computer do you have? If you have a Mac, a Thunderbolt to Firewire adapter is what you need, plus the appropriate cable (4-pin to 9-pin probably.) Otherwise, if your computer has an ExpressCard slot, you can get a Firewire ExpressCard.
If you have a desktop with a free PCIe slot, they make those, too.
Don't use AV-to-anything. There's too much quality loss going to analog composite.

Although I've never tried it personally, I heard it works. You can do a quick Google search and find that some people have had success going this route.

I have the same issue. Cannot find the ThunderboltEX 2 anywhere. Trying to get a Thunderbolt Display to connect to my PC with the ASUS Z97-A. Was thinking about buying the ThunderboltEX 3 and the Apple Thunderbolt to FireWire Adapter and updating the bios and drivers (If that will even make a difference). Were you able to find a solution or workaround?

Since this isnt' my main work machine but my side-project/homestudio/gaming rig I haven't really worked on it much so far. Also I didn't get around to installing NI Komplete yet, so I couldn't try old projects yet.
But I did a few tests and it seemed to work fine. RAM doesn't show up in the performance monitor anymore. Well...

It's $35. Fire that sucker up, plug it in, and use your favourite video capture program at as large of a file as you need.
I have solved this problem for myself. New iMac instead of MBP, but still using a USB-C port. It may seem a little intense, but this method works, and it works better than any cheapo Chinese VCR to USB dongle you can buy online.
Here's the hardware and software you'll need to get a good capture:
Hardware
If you're looking to just capture the VHS, ignore all the uber-elite perfectionista online. Get a working VCR, and clean the video heads if you feel confident enough to do so.
This is the box that your Mac will recognize as video playback hardware, and that MacOS will support for capturing without paying extra for software. Worth the price, I promise you. This is the investment part of the process, and is what enables your Mac to even see your VCR. This is the most important piece of hardware.
Don't be tempted into buying composite to HDMI/DVI/USB/USB-C/Thunderbolt. Plugging these into your VCR then into your Mac will result in failure -- your Mac won't detect that it's connected into a VCR. You'll be plugging this into your ADVC,
