Build a mini fridge?? I dont think that is very feasible. Judging from the picture amd no dimensions, i would say your best bet is to get a skinny wine fridge to fit in there, which will be great for those bombers i see. Per someone else's suggestion after doing some research, took out the bottom rack. Works great for stouts and things I don't want too cold, rest goes in the fridge.
FWIW, this is the "cellar" I have, and I've had no issues with it. All the shelves are removable, and the entire bottom shelves are one single piece. I have that removed and only keep four beers on their sides.
