Yes, you can use a computer monitor as a display for your PS3 (or nearly any video game console for that matter). There are multiple ways to set this up; I'm going to provide you with what I think is the easiest and what will give you the highest quality based on your setup. Note that there are other ways to do this, but I guarantee these instructions are what you are looking for.

If you don't have these cables, you can order them online or get them from Best Buy or Radio Shack (but they will be much cheaper online).
Note: the audio adapter I mentioned above only supports traditional, analog speakers. In other words, make sure your speakers plug in using this type of connector.
The HDMI to DVI goes from the PS3 into your monitor. The PS3 composite cables also get plugged into your PS3, and attach the audio adapter onto the red and white plugs on the PS3 composite cable (the yellow plug will just hang loose). Now, plug the headphone-style adapter into your speakers.
On the PS3, just ensure that under Audio Settings, that "Multi Channel Output" is turned on.

The motherboard was chosen because it is the newest socket (1150 vs 1155) so it will fit the Haswell i3. The i3 you have picked out is one generation behind (it's an Ivy Bridge). It's still a solid performer, but the mobo you had picked out didn't seem to have any obvious advantages over ones that are $10-20 cheaper. The mobo I picked out has an 1155 version, for example, that is like $100 (I actually am using one in my HTPC now). If you want to stick with the older i3 then that's fine; I think you could save a few bucks by going with a cheaper mobo, that's all. Specifically, your mobo is a Z77; an H77 will be cheaper because it doesn't really support overclocking. You aren't planning on overclocking, so there isn't a reason why you should go Z77 instead of H77 and save $10. Better yet, take that $10 and upgrade to Haswell. If you upgraded to a Haswell i3, the naming is similar: you can go with an H87 instead of a Z77.
Note that you might consider using an AMD processor like the FX 6300. AMD is usually recommended over Intel if you plan on getting anything less than an i5. I didn't pick one out because I think it uses more power, which put my build a little too close to the max wattage for my tastes. The 6300 is about $120; most ITX motherboards cost the same these days no matter what socket you use.
As far as the video card goes, you won't have to drop your second screen, lol. I think the 7950 can power up to 4 monitors for normal, on gaming use. Do your monitors only have a DVI input? If they don't have HDMI, you can always use an adapter like this one for HDMI to DVI. The same kind of thing is true for DisplayPort output (the 7950 has 2 of those). Most people with multiple screens don't run them both off of DVI or HDMI, it's usually a mix.
As far as the relative performance of the two cards...well, the 7950 blows the pants off of the R7-260x. The R7 is just not even in its league. The R7's performance is almost exactly the same as the HD 7790. Here are some benchmarks comparing the 7790 to the 7950 I have listed. For gaming performance, you are going to get a ton more bang for your buck if you drop to 8gb of RAM and go with a much better video card.
Pick up either an adapter or adapter plus hdmi to connect your gpu to the TV. If you check everything that came with your gpu you may already have the adapter.
If you have a XBOX with a HDMI port, use this, or something like it for the video and this for the audio, you'll just have to fiddle with RCA-to-3.5 connectors for the audio.

Sadly, no, you can't do this. SLI works only with two identical cards, and even if you could purchase another one of the same card, you would still be without HDMI.
If you're not open to purchasing a new graphics card (an r7 260x would result in far better performance, solve all these issues and is available at a reasonably low price), you could connect a DVI to HDMI cable like this, and run a separate audio cable.
If you have a DVI input on your monitor you can get one of these, but you won't have sound. I use this for my xbox on my monitor but xbox comes with an audio dongle so I output to a stereo.

Ah, the 580 will most likely come with a DVI-VGA adapter. You can use that to connect your VGA monitor. If your monitor is HDMI only, you can buy a DVI-HDMI cable to connect to that.
It's not too bad. Worst case you need to buy a DVI to HDMI cable, and get some speakers or headphones set up. If your card already has HDMI out you can just plug it in and go.

Even if you choose not to SLI the motherboard is a great motherboard. Right not SLI 970s are a better cost to performance option than a single 980 so if you want more performance that is the way to go but if you are gaming at 1080p60 then a single 970 is perfect for now and you can choose to SLI later or get a new graphics card when you want to upgrade depending on the value at the time. Some benchmarks for SLI 970s can be found here. The comparisons between cards are at 1440p because SLI 970s are a waste of power at 1080p 60fps
The MSI GTX 970 has 1 HDMI, 1 Display port and 2 DVI. Plug one HDMI monitor into the HDMI port and use this if you have a HDMI cable or this if you don't to use the DVI port to run your second monitor. Many monitors will also have display port or DVI inputs so you may not need those.

EDIT: If you LITERALLY only have a single HDMI port, you're probably talking about a laptop with a 970M graphics card, which is a different beast entirely and is below the minimum spec for VR, which might cause other issues. You could try buying a USB display adapter but I can't personally promise it would be able to display anything rendered on your graphics card, let alone anything as intensive as VR.
DVI and VGA only, which is also a bit of a drawback. I've used monitors without HDMI ports for so long I usually forget to mention that. It comes only with a VGA cable, so you'll probably have to get your own cable or adapter. I use this little doohickey for one monitor and something like this for the other.
Its not an issue Ive encountered before with any of my monitors or TVs, so I dont believe its a common issue. The only times Ive run into that error were when the signal were in a resolution or frequency that the monitor/tv couldnt support.

As for your issue, what does the display properties look like? I'm out of ideas off the top of my head.
You didn't specify if you're using a CRT(the big boxy monitors) or an LCD(flat monitor). I'd assume an LCD since it's DVI input, if so you should be running it at 1600x1200. If things are too small for your liking at that resolution you should just increase your DPI. Also return the stuff you bought, and just buy this. Then it'll be digital with no converters.

There are no mini-ITX motherboards for FX processors (AM3+ socket) but there are FM2 socket mini ITX boards. By the way, mATX means micro-ATX, which is a completely different standard that is bigger and doesn't fit in the Prodigy. The X4 750k is basically an APU without the integrated graphics if you were interested in knowing.

The newer Mac mini's have a Thunderbolt port and a HDMI port. What you have in your hand is a DVI cable. You either need a DVI to Thunderbolt (minidisplay port) or a DVI to HDMI. Details of your monitor and mac mini would have been better than a picture of your DVI cable. Your monitor may have different inputs such as HDMI and your Mac Mini may have different outputs as the one I model I just looked at.

If I were you, I would use the old PC to run XBMC to play all your local files, Chromecast to play Netflix, and PS3 for blu-rays. To setup your old computer just grab a DVI-to-HDMI adapter for your 8800GT and use a toslink cable for 5.1 audio assuming this is your motherboard. If you do not have a toslink port then grab one of these to get audio, just know it'll only be 2.0. If you upgraded your graphics card to a 6450 you'd get HD audio and video through HDMI.

As far as replacing the 'cabinet' (assume you mean computer case), that may be a little harder. You need to find out what size motherboard you have in there (ATX / mATX / ITX) and if the power supply is a standard size. I know sometimes prebuilt suppliers like dell use strange form factors designed only for their own hardware / cases.
Silver stone makes really nice htpc cases. But again, you're probably going to want a mATX / ITX motherboard to fit in some of the smaller form factor cases. Might be a problem if yours is ATX

As for the sound, i haven't a clue.
Get an HDMI to DVI adapter. They're passive adapters, pretty cheap, and are pretty much universally compatible with HDMI sources and DVI displays. Adapters are available as integrated cables, or as separate components that are either male HDMI to female DVI or the opposite. The polarity of the adapter would determine whether you use a DVI or an HDMI cable to make the connection, and which end of the connection the adapter would live on. I would get a cable to reduce the number of points of failure. This one looks cheap, as long as you're willing to wait for shipping.

I would not try an svideo personally. I have my 360 plugged into my tv using an HDMI cable. But if your going into a monitor that doesn't have HDMI, you could use a HDMI to vga or dvi depending on what you need, and then rca audio to rca female to 3.5 mm female, then plug in pc speakers to the adapter. Linked below are the parts. This is what I would try, I don't know that it would work.

HDMI does carry sound, but dvi and vga don't deliver it. I hope that helps.
What kind of GPU does your computer have? Most of them do not support more than two displays connected at a time; your cheapest option without GPU support is a DVI splitter and a DVI to HDMI cable. The displays on the splitter will be mirrored.
I run an HDMI to DVI cable such as this one for video, and then use one of these for my audio. The HDMI/DVI interface gives a much better picture than the RCA/VGA does. I used to have a VGA cable such as the one you want to use/are using and the picture was blurred and the resolutions were weird.
You'll have one HDMI port on the graphics card, but for the other one you'll need something like this.. Make sure you plug both monitors into the graphics card.
Everything you need to build should be included, and you may even have a few extra left over.

The thing is though, you have to remember that the reason HDMI exists is because it's DVI Single-Link+5.1 channel audio. That is to say, the only reason HDMI exists is because DVI could not output an audio signal.
If you're gonna use external speakers instead of monitor speakers (which sound awful) there's really no reason to go with HDMI. On TVs it's a bigger deal as those do have much better speakers than a monitor would come with. Realistically, if you plan on using the monitor to connect a console, you'd need external speakers in which case you'd be the same off just getting a DVI Male to HDMI Male cable.

It looks like that has a DVI connection. I can't really tell, but it also looks like some have an HDMI connection. Do you have the HDMI option? Also, Do you have an HD TV with HDMI? If so, you can use a DVI to HDMI or if you do have HDMI, an HDMI cable would work fine.
For some reason I've never had luck simply plugging both my monitors into the DVI-i and DVI-d ports and leaving it at that.
So if you only have DVI on the monitors, plug one directly DVI-DVI then the other get a DVI-HDMI cable or use an HDMI-DVI adapter (which might actually come with the monitor or GPU).

The bezel is small enough for me to easily ignore it in games, plus the side screens are really more for your peripheral vision, which is why it's kinda stretched out.
If you want to do a 3 monitor setup on an AMD card, you're also going to need an active (not passive) mini display port to HDMI port(I have this one) and if you only have one HDMI out on your card, you may want one of these (not the same one I have, couldn't find that one)
