I don't know what your current setup looks like, but this sounds like the thing A/V selector boxes are made for. You probably won't use the video plug if you're just using stereo speakers, and you're going to need some 3.5mm to RCA cables, but it all seems fairly straightforward.

You get yourself an A/V selector and hook up your cables. You can use your headphones like your normally do, or maybe you'd prefer to put a headphone/speaker switch off the output of your A/V selector.

If you want to use 5.1 surround, just buy a Component A/V Selector, and use the extra port to run your extra audio channels instead of video. Dunno how you'd switch to headphones running like that, but I assume you're doing it now, so it can't be too hard.

Also, someone apparently makes gadgets like this, so that may work better for you depending on what cables you already own.

I have the wires already, I just need a switch, not a mixer - I would like it to not use power.

I found another one, but no mini jacks and ugly as sin, but less than $10

You could always get a TV tuner for your PC. I used to use one, there was probably a .5 second delay so If you are using it to record games I would play on a TV and use one of these type of things or and just have cords run to the TV tuner for when you want to record.
