Old-Fashioned (International) Pumpkin Pie Filling

  • 1 large can pumpkin (29oz)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/4 tsp. cloves
  • 3 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. salt
  • 4 eggs, beaten (plus the yoke of a 5th egg from the pie crust)
  • 1 cup cream

    Mix dry ingredients together. Mix wet ingredients together, then combine. Bake in shell for 1 hour at 350°

  • 2 cups flour
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 1 cup firmly packed Crisco
  • ≈ 3/4 cup of ice water

    All ingredients must be cold. Keep them in the refrigerator over night before mixing. Mix dry ingredients, then cut in the Crisco with a pastry blender until well blended. Slowly cut in ice water until the dough can be kneaded. The trick is to keep it very cold and handle it as little as possible to make a light and flaky crust. Once you have it in your pie pan, use the egg white from your 5th egg to paint over your crust to help keep it from getting soggy from the pie filling moisture. Then add in your pumpkin pie mix and bake at 350° for an hour, or until you can dip a knife into the pie custard and have it come back clean.

    No one ever said pies were a diet food. 😋 Enjoy!

    Edit: I forgot to mention this recipe makes two pumpkin pies. Both the custard and the crust is enough for two pies.

How can you be American and never had Libby's? Are your parents immigrants? You know at thanksgiving how the supermarkets all have end caps full of tins that say "Libby's" on the front of them? That's squash, and it's traditionally used to make pumpkin pie. It's not low fodmap.
