I am not a professional at this, but I have had success making cheese omlettes. Like I would take three eggs and crack them into a bowl and beat them before cooking them on the stove. I also add in shredded cheese to said bowl and mix as well, or other things I may want to add, like bacon bits. After mixing and beating it how I like it, then I cook on a non-stick skillet which has been lined with a coating of melted butter (I drop a few chunks of butter on it, and as it melts move the chunks around until coated).
Although, /u/KneeDeepThought/ seems to have even better tips and experience about this, I will try my future omelets like who they outlined.
