It's pretty much impossible to go USB-HDMI
You could try USB-VGA like this. At 1920x1080 you shouldn't notice a difference between VGA and HDMI for most things

I think if you use Photoshop and need to output to multiple monitors, the best bet would be getting the ASUS N550JK for its quad-core i7, Nvidia GTX 850M graphics, and beautiful 15.6" 1920x1080 IPS touch display.
It doesn't have more than a single HDMI port, but the processor is powerful enough to easily handle getting a USB to VGA Adapter.
And as far as 8GB RAM goes, usually no. More doesn't help unless you use it. However, the N550JK has a single 8GB stick installed, so you could easily add a second stick if you wanted.

For the simple reason that it would be easier for her to 'plug and play' the monitors to whichever LT she wants without having to unscrew anything.
This will work but will limit your resolution to 800x600.

This will also be fine with USB 2.0
It is just the matter if you are willing to give up a larger resolution for a cheaper product or spend more for the native resolution

If you're not doing anything graphically intensive, you may be better off using 8 of these and saving yourself ~$150 or so. Our Workforce Management team has 7 TV's mounted on the wall split between 2 pc's. They're only split because the PC's are Dell's and ran out of USB ports after other peripherals were installed (kb/mouse/wireless). There is a slight amount of input lag, but they are actually interacting with the machines and refreshing their call queue and running calculations in excel, etc. If you're just using this for digital signage, I can't see you needing more than this.
Obviously doesn't have to be this exact product, just grabbed the first thing i saw off of amazon for an example. Pluggable is what they use here and they work fairly well.

There simply aren’t many x8 cards made. There really isn’t much of a market for them. Even the low profile cards that can’t even saturate x1 will be pinned for x16 just to save consumer confusion.
You are basically on a shoestring budget with zero flexibility.

it seems like you might've corrupted his Windows install. Let it repair all the way and see if it gets fixed
Newer technology like displayport will allow you to "piggyback" the right monitors off each other.

I have a displaylink adapter something like this and Raspbian has drivers built in for it. You can use it to do a 2 monitor setup.
HDMI only carries one signal. If you split it, the same picture will be on both screens.
You can use a USB-to-VGA device. These are adequate for general use, but not gaming or movies. Check the specs to make sure you are compatible. If you have USB3, there are better ones.

I think a USB display adapter is your next best option. Something like this: https://www.amazon.com/Plugable-Graphics-Multiple-1920x1080-Chromebooks/dp/B004D0QC0A. Not too knowledgeable on them though but this one is well reviewed and seems to fit your needs. Are there absolutely no video ports on the pc? Something like a DVI-D to HDMI cable will be cheaper and more practical.
I'm not sure about utilizing onboard AND graphics card, but I know I have used more monitors than I had ports at times. I have used adapters like this at work to get two monitors to run off a laptop that only had one port. Could work for you if the other options do not work
Here is one I've found. These don't allow for nvidia surround though. You would need a second gtx560ti to game across all 3 monitors.
edit: If you dont have the psu or mobo for a second card, I highly recommend a hd7970 for eyefinity or a gtx770 for nvidia surround.

I have one plugged into my chromebit to drive 2 monitors.
I don't think it works with more than 3 though.
