Probably better to get an adapter off the shelf for this. They're still readily available, e.g:

Well, in any case, you can look the exact model up on everymac and checl which resolutions are supported with your hardware config. You'll still have to figure out the DIP switch settings for each respectively and test until something works. If you can find out check to make sure the LCD you want to use supports 1024x768 and preferably 800x600.

Here are some pictures of the DIP switch instructions for the adapter I have. It's a no-name adapter that I ordered from Amazon. The one I've got is a 10 switch model. This is it, but I only paid $8 for it and it was being sold by 'SFCable' at the time (probably equally no-name company). Mine worked with a Performa/Powermac 6100 and the Mac LC II, but that's all I can confirm.

P.S.
Just speculation, but I bet if your DIP adapter is a 6 position/10 position model that it conforms to the same settings. I'd just ignore the multisync monitor 'page' though. Also, on a closer inspection it distinguishes between IBM/NEC monitors but appears to be duplicate text/chart. My adapter is set to 145 which is either a 13" RGB or 12-14" High Res with Composite Sync based on the sheet.

P.P.S.
As a heads up, I seem to recall that the PRAM battery being dead kills the video output on the PM6100 so maybe you should check on your if you haven't replaced it already.

Yes. For the 7300, you need a DA-15-to-VGA adapter. (That is just one of many similar ones you can find. Just make sure it goes the right way, to connect a VGA monitor to a vintage Mac, rather than to connect a Vintage Apple monitor to a VGA computer.)

For the 8100, it depends on which video card it has. The "stock" 8100 used Apple's extremely short-lived HDI-45 display connector, that there was only one monitor for. (As did the 6100 and 7100.) But many 8100s were sold with either the "AV card" which added video input an output as well as a standard (for Apple) DA-15 video port or the "High Performance Video" card (HPV card) which also added a DA-15 video port. If you have either of those, you can use the same adapter I linked to above.

If you only have the HDI-45 port, you would need the HDI-45 Display Adapter first, then the DA-15-to-VGA adapter linked above.

The Mac LC can use a regular VGA monitor with an adapter like this: https://www.amazon.com/Adapter-DB15-Male-Female-Switches/dp/B0016OC1J2

Just a note that the adapter on Amazon is good for up to 640x480 per the item description. For more options, you can also get one of the 10-switch versions which does 800x600, 1024x768, and higher, which you will probably want for a 6500, unless you're using a very small or poor-resolution monitor. Running OS 8 or 9 will be quite unpleasant on anything smaller than 800x600.

Hmm. The 4 pin "S-video" is what the mouse/keyboard plug into... The 8 pin one has what looks like a printer icon next to it. Are you saying that one of these will work as an S-Video output? I might grab an adapter and give it a try either way.

I did get this from amazon. I was hoping the manual would tell me the configuration of the pins I should use but its not helpful. (Manual pages are pictured in the first review on that page). It looks like this adapter is only meant to be used with an IBM monitor or NEC (not sure what that is). Either way I think its above my level of knowledge, so I'm going to try the S-Video, unless you happen to be able to point me in the right direction in configuring this thing.

Also the reason is to be able to play old Macintosh games for nostalgic reasons and fun.
