The wheels will be fine (or as fine as any are likely to be). Good question about the tires, though. Max PSI is probably around 90 and you're likely to need at least 125 in the back. The two bikes I linked don't have clearance for tires wider than 1.75" or so. I still think the stock configuration would work, but it'd be borderline.

Steel frame, V-brakes, 27.5" 36H wheels with wider, heavier rims and 2" tires. I'd have recommended it first if I'd remembered it. These smaller-diameter rims are actually preferable, more lateral stability. Hence the interest in old mountain bikes (they usually have 26" wheels).
