Get a GV-USB2 capture card! It's basically the go-to for standard definition console gaming.
He'll also need a video/audio splitter. I use this one and it works wonderfully. You'll need an extra set of composite cables as well. (That's just an example. Get whatever will ship on time for you)

If you are projecting SD then you could get away with this setup:

HD will be more expensive - you'll need to substitute the USB composite devices for HDMI which will require either a laptop with multiple USB3 ports, or a desktop with PCIe expansion cards; and you'll also need mini-HDMI to HDMI cables for the cameras.
Alternatively, call up your local rental house and see if they have any video mixers available that accept HDMI inputs.
Network streaming
If you're on a really tight budget, VLC can be used to stream video over a network. This relies on you having a fast network though!
Well it's not overly cheap if you want to be able to control the volume. It's really just a splitter that takes the composite output from the Wii, feeds one branch to the TV, and the other to a 3.5mm adapter that then goes into a small amp that you plug your headphones into. The amp is really just a volume control, and by itself is $30, so if you don't care about being able to adjust the volume (I don't think it's too loud otherwise), then you can get the price down to under $15.
