I can't speak to the pier replacements, but I think this book would serve you well:
Renovating Old Houses: Bringing New Life to Vintage Homes (For Pros By Pros) by George Nash

He goes into a lot of detail on foundation repair.

Just curious... what type of foundation do you have? I have a stone foundation, and shortly after I moved in I repointed one of the walls, being careful to shove as much mortar into each crevice as I could using my tuck pointer. That wall seems to stay pretty dry now, and I plan on doing the same for the rest of the foundation.

Regardless of what type of foundation you have I'd highly recommend checking out Renovating Old Houses by George Nash. There is a lot of information on foundation problems. One very interesting idea he provides for diverting water away from your foundation is a "ground roof." Basically that involves digging out around the foundation, laying down 4 x 8 sheets of polystyrene insulation panels around your foundation at an angle graded away from your home, then covering them back up.
