I'm confused a bit by what you are asking. If you have wifi, you already should have a router. (I'm using Verizon's Quantum Gateway, with a network extender on my top floor).
I think you are thinking something like a Swann or Lorex system. I (personally) believe that's a little old fashioned. But my thinking is influence by what I've seen on YouTube (and have purchased).
PoE (power over ethernet) implies an NVR (NETWORK Video recorder), and there are several. But I'd be quick to point out, many people use cameras WITHOUT a DVR or NVR (I am one of them).
I can't speak to those big box store systems, but I can speak to another system because I use their products, and that is Reolink.
My Reolink systems consists of battery operated and AC powered Wifi cameras, and I only need the PC client and the phone app as they each have Micro SD cards (they overwrite when they run out), and you can download the video.
Reolink has such a system either PoE or Wifi only (PoE on sale below). In terms of wifi cams (not PoE), Reolink and Yi (they sell their cameras in singles or twos without NVR), have the very best night vision (my opinion). The camera in the link is on sale.

I like the battery powered ones for their exceptional night vision (Reolink excels in this area), and their portability and concealability.
I personally am using the reolink Argus2, the RLC 422W (dome camera), and [when it gets here] the RLC 511W (latter two cams on the 5Ghz wifi network).

What I would do is download something like iSpy (open source video surveillance program) buy my cameras (I prefer IP cameras ran over PoE ethernet cabling), buy my cabling, and buy a PoE switch with however many ports you need based on how many cameras you plan on installing...
