iFixit's probably your best bet, you can find their guide here. They also have the best batteries for the job. If you're going for the dual, might I suggest two 128 gb SD cards? It might save you a bit of money, as 256 was until recently the largest capacity card. See 2nd edit. Doubly unfortunate is that this is notoriously the most difficult iPod to work on, so good luck.

It's actually very easy. This Apple Support page says the following about the iPod Classic introduced in 2007 (6th generation):

The last three characters of the serial number will be one of these: Y5N, YMU, YMV, or YMX.

As /u/FreakyWays already listed the serial number, and it ends with YMU, it's a 6th generation version.

Also notable: on the 6th generation iPods, the serial number is engraved on the back, on a line by itself.

Honestly you'll probably want to go as big as you can (depending on how many games you anticipate buying and how often you care to switch out your SD card)

I'm on mobile, so this will be an ugly link, but here's a 256GB card on Amazon. It's a little pricey, but is arguably worth it. You can also go for a 128GB or even 64GB, but at that point you'll have to buy a few cards and be switching between them more often Siemens in his you organize your games

Oh shit. This has 80mb/s too. Good find! I think it makes infinitely more sense at the moment to get two of these and just swap and reboot between them when the time comes instead of dropping waaaay more cash on a 256.
