However I would suggest putting a bluetooth (5.0+ ideally for security and obsolescence) enabled WiFi card+ antenna in to reduce latency for serious gaming use.

This is inherently false. All three major consoles use Bluetooth connections for their controllers, as does the Steam controller. I use my Steam, Switch Pro, and PS4 controllers via Bluetooth all the time on my PC with no lag of any kind.

O.P. - I suspect the issue is the adapter you're using is some random Chinese brand. Try the TP-Link or ASUS branded adapters, the quality control would be much better for a name brand.
