A single bluetooth dongle should be fine for multiple controllers. How many probably depends on the dongle.
I have this and it claims 7 simultaneous devices. I only have 3 controllers connected so I can't really test that claim.

Don't buy wired controllers. Get a wireless 360 controller and a wireless receiver. If you're buying a PS3 controller, get a compatible bluetooth dongle (you'll need to also download MotioninJoy).
PC Couch gaming is great. Almost every game comes with built in controller support, and there are some great local multiplayer games available on emulators.
This is the one I'm using for my controller. I use Better DS3 but I assume the adapter should work fine with everything.

To be honest you are prolly better off getting a small USB Bluetooth device and mounting it externally to the case. The combined wifi/bluetooth chip does not have easily extendable antennas.
