The difference is jerry rigging a power supply to run amp the you already have vs running an amp that is designed for exactly what you are trying to do
Regulated DC power supply that provides 12-13.8v @ 60A or so would be more than enough for most things in a car. It used to be commonplace for certain car shows, but, higher amperage power supplies were needed to run some of the car audio equipment.
So long as you’re not trying to start the car, and preferably pull out the fuses/relays for ignition, fuel pump and potentially ECU, go for it.
