After some discussions with other users, I realized capturing the stereo backup file is a bit trickier than expected with a PC. But I found a solution using a $18 audio capture card from amazon that works perfectly. I recorded a complete walk-through, but if you're familiar with the process, the only missing piece for you is the USB stereo audio capture card. Here's the specific one I used:

If you have any questions or if I can clarify anything or improve the video, please let me know.

Thanks!

For those who are new to hobby and not considering getting a field recorder yet, but want to save samples - could be a good option. I’m using this USB audio capture card https://www.amazon.com/Digital-Audio-Capture-Windows-10-11/dp/B019T9KS04 .

This little thing is technically an audio interface, but very small and cheap. Gets the job done (in stereo for the backups!) for my PO-33. https://www.amazon.com/dp/B019T9KS04/ref=cm_sw_r_cp_api_i_l-4WDbXB93TX1

I use this to transfer my cassettes to Audacity. You need a boombox or even a Walkman or something with a line out and your computers microphone in.
