you screw onto your spare and then run the other end somewhere convenient so you can both check and fill as needed your spare without digging it out!

Just use that pump and a pressure gauge. Even expensive floor pumps have mediocre gauges.
This really depends on your budget and how accurate you want it. I use a Longacre Racing gauge that has been very durable and decently accurate. Lots and lots of guys use the liquid filled MotionPro unit, but that's a bit more costly but not totally out of hand. Then you could go full retard with something like this.

One way to check for a lot of these is to look over the tires. Do any of them have odd wear patters. tread depth gauge
Use the tread depth gauge to verify that your tread is even all over. Check on each side, the middle, and in many many places. Use a bit of chalk to mark each place you check. Take note of any off reading mark on the side wall in these places.

Situation: I do a ride that's really fast that has about 20miles on the road to start, and then we get to the trails and air down and do all the fun cross stuff, and then take the beach back to our starting location.
When airing down the tires it's hard to guess.

yeah, thats not going to do you much good. i personally can use the foot gauge pretty well, but if you are having issues, an accurate gauge is worthwhile to have. i use my gauge in the winter time to make sure im low as i can get while still holding a bead.

this is what i have. but anything that lets you read down to the half lb down to 2 or 3lbs is good. forget about the ones that have the little stick that shoots out the end(pencil gauge).

I bought an AccuTire dial gauge at a Pep Boys about 15 years ago that is still working great. It's similar to this one though it's blue metal with a white face.
I also have this Victor digital gauge that was in one of my cars when I got it. Also probably around 10 years old.
I have never used a pencil gauge that gave repeatable readings.
I've had this one for 4 years and it's been good to me. I like that it reads to the half-psi.
I bought this one 2 years ago for my bicycle tires and now I use it on my truck too. It reads to the tenth-psi and it's not much work to top off my truck tires with it.
Like many others have mentioned, I prefer the Res Q Me. I have one on my keychain at all times.
I have given one to everyone in my family as well, and I also give them as graduation or birthday gifts to friends.
I also have another seatbelt cutter in my glovebox and a tire pressure gauge with window breaker and seatbelt cutter in my center console.
