I can personally vouch for Pure Komachi and Forschner knives. They are quite exceptional for the price. And apparantly the new Ginsus are fully forged Japanese steel.

Don't know about Mora chef knives, but heard Victorinox are pretty good.

Without ever using a Calphalon knife I can't say with any authority but from what little I gleaned at Amazon just now I'd say upper low-end to lower mid-range.

These are the knives my gandmother got me as a "congrats on graduation and first apartment" gift. I'm no professional chef, but these are amazing. The block is self-sharpening (and as far as I can tell, it really works), the knives are high quality. Even the little steak knives it comes with are awesome.

I will say, these knives DO need a little extra care- hand wash only (although we did run one through the dishwasher by accident a few times and it's fine), and make sure you dry and put them back. But I've had them for six months and they have been amazing for my little, amateur home cooking-self. Plus, they're on sale right now on Amazon.

Shun knives are absolutely hands down my favorite! They're light, excellently weighted, super sharp, and very comfortable in your hand. However all of this comes at a price, but it's WORTH IT! Free lifetime sharpening... just box them up, send them off and they do it for free.

I also have a couple of Miyabi Morimoto knives.. love the paring knife. The Miyabis will be a bit heavier than the Shuns as IMO they're a little lower quality but only by a fraction.

Having used Henckels and Wusthofs as well, I still prefer the Japanese knives. That said I did pick up a ZJA Henckels serrated knife because the price was right. It does its just very well but feels a bit heavy to me.

You need a BBQ. I recommend a regular charcoal Weber or a gas Weber for outside. I also recommend some decent knives to start out with.

Update: I just got home from my sister's out of town wedding shower. I got them these two, plus a good instaread thermometer.

They were thrilled, gushed about how pretty they were, and said it was the best 'surprise' gift of the shower.

Plus, I was staying with them, and it was the ONLY gift they unpacked in their apartment after the shower.

So I've never been to a festival but when I was younger I was a ska kid. And this one time I had a broken foot but my friend got me tickets to a Reel Big Fish show so I went on crutches and like everyone protected me. Complete strangers pushing back against moshers, moshers giving them the evil eye and then seeing me and making the pit move back, people carrying me up to the front, the security guard pulling me over the barrier so the crowd wouldn't smush me, and then the greatest thing ever!!! Dan, the trombone player, saw me and was like, come over here and sit on the stage! It was amazing! Africkinmazing.

It is definitely overwhelming! I kind of miss the days of a catalog...you know, when you had 5 choices of something and that was IT! And you were happy with one of those 5. just a tip: go to garage sales & moving sales to find dishes, glassware & utensils. My gf has a couple sets of English bone china she procured from an estate sale that would've cost over $1000 brand new. And i scored a brand new Cuisinart at a neighborhood block sale last yr. Depending on your style of cooking i'd suggest an aluminum stockpot, a couple roasting pans (NOT non-stick), a cast-iron skillet, a large dutch oven and a non-stick fry pan; plus a couple stainless steel or non-stick sauce pots. Look over your 10 favorite recipes and make a list of pots/pans you actually use. Be sure to check out the home goods section at discounters like TJ Max for closeouts. I've seen Calphalon, Anolon & Le Creuset there (mostly the smaller sizes though). For affordable kitchen knives, take a look at Victorinox/Forschner. They've got a great rep for overperforming in their price category. I gave my cousin this set for her wedding a few yrs back and she says the blades hold their edge far longer than her old Henckels.

I have a best friend who is a professional chef and swears by this set of Global knives for an introductory set which can last half a lifetime if cared for. I bought it on her recommendation and I've had the set for 12 years now, love the weighting and grip and the blades stay sharp for a while.

You need to get your knives professionally sharpened when they dull, don't do it yourself unless you take a class in it first and buy the proper tools. Even so, I have a few friends that are chefs or own restaurants and they all have their knives sharpened professionally. I only know one guy who does his own.

I just bought myself a Tojiro DP Damascus 2-piece Starter Knife Set as an early Christmas present. So far I've been impressed. The set is a little more than your budget, but it comes in a very nice looking box and would make an awesome present.

The knife is razor sharp and looks really nice. The demascus steel is hand forged. You can't find a better deal on a hand forged Japanese knife. Definitely worth every penny, hell I'd pay more for it again.

Yeah, Cook's Illustrated said this knife tested with other highly rated chef knives. If you are looking for a chef knife on the cheap, I'd buy that one.

I've had my set of Wustof for about 9 years, they are still great. I spent about 300 bucks for them. I got a 8 inch chef, a fillet, a, carving, a paring, and a bread knife. [It is 379.00 now on amazon] (http://www.amazon.com/Wusthof-Classic-6-Piece-Chef-Knife/dp/B0000DJZME).

I'd stay away from cutco. I've used several cutco knives in the past (my buddy has a set) and I think they are flimsy and the handles feel weird.

Jimbozu is right the way the cutco knives are made makes them harder to maintain and they are made of an inferior steel. Thirty seconds on google led me to this set of knives which I'm reasonable sure will be superior to a cutco set in every way and is priced very similarly.

The Ginsu 7108 Chikara 8-Piece knife set is only $60, are fully forged, and has one of the highest aggregate review ratings on Amazon, in addition to receiving a Consumer Reports Best Buy award in their testing. No bread knife, unfortunately, but with the money you save you can easily get a good one separately.

It's by no means the pinnacle of chef knife perfection, but it would be difficult to best the price-per-performance ratio it offers.

Everyone has different preferences, and some things are more important to some than others. That said, I love this set.

All single piece construction, well balanced, matte textured handles that provide good wet grip...just a good all around set at a good price.

I have had them 4 years and I cook 4-5 times a week. Sharpened once, and really it was only the santoku that needed it. Take care of them and they'll last a long time.

Edit: almost forgot, the shears aren't great, but you can find another set really easy. They are ok at first , but they aren't built to last.

This may get down voted for not being purist enough, but I couldn't be happier with some of the items I have purchased from AmazonBasics.

I used to own a lovely set of Henckel knives which I lost in a separation. I did a ton of research on replacements, was 99% sure I was going Victorinox Fibrox... then decided to order an Amazon Basics 18 piece knife set for roughly 1/3 the price.

Honestly? I love it. The knives are all sharp and have good handfeel. Nicely balanced, and probably the best value for the money I've found. I also bought a digital kitchen scale and "Silpat" cooking sheet knockoffs from Amazon Basics that I'm also thrilled with.

For pots and pans, you can get great deals on major brand sets at places like Bed Bath and Beyond. By combining a couple discounts, I ended up getting two full sets of Calphalon, one non-stick and one stainless, for less than I was expecting to pay for a single set.

If you know someone in the business, you can often get access to restaurant supply stores that have great deals on utilitarian, durable cookware if you don't care about a fancy brand name.

And lastly, I've been pretty happy with utensils I've bought at IKEA. Not always thrilled, but generally good value. I wouldn't buy the bottom of the range there as they just aren't quite "good enough" for serious everyday use, but the mid-range and up is good value for the money.

PS - You can often times find nice bits of specialty kit at high end places like Sur la Table and Williams Sonoma. It's often quite high priced normally, but you can often "fill in" your kitchen with random finds... I found a beautiful deal on small ramekins for 20% of list price at SLT.
